Cranberry Chocolate Chip Oatmeal Cookies

I just made these and they aren’t staying around very long.  Try them yourself and watch them disappear!

Ingredients:

  • 1 ¼ Cup margarine
  •  ¾ Cup firmly packed  brown sugar
  • ½ Cup granulated sugar
  • 1 egg
  • 1 tsp vanilla
  • 1 ½ Cup all purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 3 Cups quick oats
  • One (12 oz) bag white chocolate chips
  • 2 Cups Dried Cranberries  (I used Craisins)

Heat oven to 375 degrees F.
Beat together margarine & sugars until light & fluffy.
Beat in egg & vanilla.
Gradually add flour, soda, & salt.
Stir in oats, white chocolate chips and dried cranberries.
Drop by rounded teaspoonful on un-greased cookie sheet.
Bake 11 minutes.  Cool 1 minute.  Store in tightly covered container.
